Collard greens are members of the cabbage family with many saying the flavor is a cross of cabbage and kale. It is an excellent source of vitamin A, vitamin C, and calcium, a rich source of vitamin K, and a good source of iron, vitamin B-6, and magnesium. If you're looking for more ways to incorporate greens onto your kid’s plate, and who isn’t, try these collard green egg rolls.
One bunch of collard greens
Nasoya egg roll wraps OR Egg roll wraps
1 minced garlic clove
1 tablespoon of diced onion
Neutral High Heat Cooking Oil (ie. grapeseed oil, avocado oil)
After washing collard green leaves, stack leaves and do a chiffonade cut. This means to stack the leaves flat on top of each other, roll tightly into a bundle and cut across in small sections to create 1/4-1/2 inch wide strips.
Heat a large pan to medium heat, add about 1/4 cup of oil to the pan and collard greens.
Add onion, garlic, and salt to taste. Sauté with the lid on until softened but not completely wilted. Check in about 6 minutes and should be done under 10 minutes.
Remove collard greens from heat and let cool until you are able to handle them with your hands.
Put a small amount of collard green on an egg roll wrap, and using your fingers to dip in a small dish of water, wet the first 1/2 inch of the edges of wrap with water.
Roll one corner over the collard green tightly, then the side, and roll to the end of the other corner like a burrito. Using water as needed to seal the roll
Spray or brush oil lightly all over each roll and place onto a lined tray of the air fryer.
Air fry for 3 minutes, remove from air fryer and flip, then air fry for another three minutes.
Enjoy!

Every year on April 22nd, people all over the world celebrate Earth Day, a special time to show love and care for our planet. But this week, the spotlight was on younger changemakers—students, classrooms, and communities coming together in creative and inspiring ways to help protect the Earth.
Across the United States, schools turned into centers of environmental action, learning, and fun. From planting trees to building bee hotels, kids proved that you don’t have to be a grown-up to make a big difference.
Here’s a peek at how Earth Day 2025 was celebrated by awesome kids and schools just like yours!
Every April 22nd, Earth Day calls on us to pause, reflect, and recommit to protecting the planet we call home. What started in 1970 as a grassroots movement has grown into a global call to action, reaching over a billion people in more than 190 countries. This year’s Earth Day theme, “Our Power, Our Planet,” reminds us of a profound truth: that we hold the power—individually and collectively—to shape the future of our world.
Every year on April 14th, National Gardening Day reminds us to dig in, get our hands dirty, and reconnect with the earth. It’s more than a celebration of soil, seeds, and sunshine—it’s an invitation to grow something meaningful. In recent years, National Gardening Day has evolved from a backyard pastime into a growing movement tied deeply to sustainability, resilience, and environmental awareness. As climate concerns continue to rise, gardening offers a beautiful and practical way to contribute to a healthier planet, starting in our own backyards.
