Whole Foods Gluten-Free Cauliflower Gnocchi
Frozen Mixed Vegetables
Cooking Oil
Garlic - 1 clove
Salt
Pepper
Garlic Powder
Add gnocchi to 2 tablespoons of oil over medium heat in a pan.
Stir gnocchi and let cook for about 2 minutes or until one side is golden brown.
Continue cooking, until desired browning and tenderness.
Remove from the pan, and set aside.
Add minced garlic clove to the pan and saute until fragrant.
Add mixed vegetables, salt, and pepper, garlic powder, and stir to coat the vegetables with oil and garlic.
Cover and let cook for 3 minutes.
Add the cauliflower gnocchi to the pan and stir all of the ingredients together.
Cover for 2 minutes, stir and serve.
Added bonus of cauliflower in the gnocchi is a great hidden vegetable for picky eaters. You can even substitute other veggies to suit your kids taste. This simple recipe is easy enough to add additional flavors, seasonings, and make it your own. Enjoy!
