Air Fryer Egg Roll Recipe with Collard Greens

Collard Green Air Fried Egg Rolls

These air fryer egg rolls are an easy and fun way to incorporate healthy kid-friendly recipes into your meal planning. This is a simple gluten-free and vegan recipe. Swap out the hassle and added oil by using an air frying to create a healthy kids snack filled with delicious collard greens.

This air fryer recipe is simple to make and only uses a few ingredients. These golden and crunchy egg rolls make it a delicious family-friendly snack while adding healthy veggies of collard greens. Make it a fun activity and include kids in rolling them up, which can also get them more excited to eat them when they are able to be involved in making them.

Collard Greens are a Super Food

Collard greens are members of the cabbage family with many saying the flavor is a cross of cabbage and kale. It is an excellent source of vitamin A, vitamin C, and calcium, a rich source of vitamin K, and a good source of iron, vitamin B-6, and magnesium. If you're looking for more ways to incorporate greens onto your kid’s plate, and who isn’t, try these collard green egg rolls.

Air Fried Egg Rolls with Collard Greens Recipe

Ingredients:

One bunch of collard greens

Nasoya egg roll wraps OR Egg roll wraps

1 minced garlic clove

1 tablespoon of diced onion

Neutral High Heat Cooking Oil (ie. grapeseed oil, avocado oil)

Directions:

  1. After washing collard green leaves, stack leaves and do a chiffonade cut. This means to stack the leaves flat on top of each other, roll tightly into a bundle and cut across in small sections to create 1/4-1/2 inch wide strips.

  2. Heat a large pan to medium heat, add about 1/4 cup of oil to the pan and collard greens.

  3. Add onion, garlic, and salt to taste. Sauté with the lid on until softened but not completely wilted. Check in about 6 minutes and should be done under 10 minutes.

  4. Remove collard greens from heat and let cool until you are able to handle them with your hands.

  5. Put a small amount of collard green on an egg roll wrap, and using your fingers to dip in a small dish of water, wet the first 1/2 inch of the edges of wrap with water.

  6. Roll one corner over the collard green tightly, then the side, and roll to the end of the other corner like a burrito. Using water as needed to seal the roll

  7. Spray or brush oil lightly all over each roll and place onto a lined tray of the air fryer.

  8. Air fry for 3 minutes, remove from air fryer and flip, then air fry for another three minutes.

  9. Enjoy!
